So typically, it is more common to see ‘ espresso chocolate chunk cookies ‘ or ‘ coffee chocolate chip cookies ‘ recipes, which either use espresso powder or instant coffee. In this case, I used neither but both of them could technically be used if that’s all you have on hand! I don’t know about you, but I am still on the ‘cold brew’ trend and if you’ve been to the Trader Joe’s coffee aisle, you would see that they have Instant Cold Brew Coffee. Let me just tell you- LIFESAVER. I would have to plan out my coffee like 24 hours in advance in order to french press my cold brew coffee. Anyway, I used the Trader Joe’s Instant Cold Brew Coffee Powder in these shortbread cookies and they’re freakin’ delicious!
THE CHOCOLATE CHUNK COFFEE SHORTBREAD COOKIES EXPLAINED:
A buttery shortbread cookie base with deep flavors of cold brew coffee that bring out the richness of the chocolate chunks in these perfectly golden crispy and chewy cookies.
HOW TO MAKE THESE CHOCOLATE CHUNK COFFEE SHORTBREAD COOKIES:
Beat butter, both sugars, and vanilla extract until light and fluffy. Add in flour, cold brew coffee powder, and salt, mix until just combined. There will be large pieces of dough. Fold in the chocolate chunks
Divide the dough in half and roll each half into a 6-inch log, using plastic wrap to help shape the soft dough. Wrap logs tightly in the plastic wrap and chill for 1 hour in the refrigerator.
Preheat oven to 350°F and grease cookie sheet and line with parchment paper so it sticks. Using a sharp knife, cut logs into 1/2 – inch rounds, you should get 24 cookies total. Place rounds 2 inches apart on cookie sheets. This part is optional, but you can gently press rounds with the bottom of a flat bottom glass to make them level. Chill for 20 minutes in the refrigerator.
Bake for about 15 minutes, rotating pans halfway through, until very lightly golden and edges are set. Cool for 5 minutes on cookie sheets, then transfer to a wire rack to cool completely.
