Are you ever in the mood for “homemade” pancakes but don’t have pancake mix on hand? This recipe is perfect for you, you can have fluffy homemade pancakes any time you want!
THE FLUFFY PANCAKES EXPLAINED:
Buttery, fluffy pancakes with the versatility to add anything to them.
- peanut butter cups (shown above)
- chocolate chips, butterscotch chips, peanut butter chips, etc.
- fruits- strawberries, blueberries, bananas, etc.
- Oreo cookies
- granola
- nuts
- candies- Butterfinger, rolos, etc.
HOW TO MAKE THESE FLUFFY PANCAKES:
In a medium mixing bowl mix together the flour, baking powder, baking soda, salt, and brown sugar.
Add buttermilk, eggs, and melted butter (or oil) and stir until combined. There may be lumps, that’s okay! If you have any add-ins, this would be the time to throw them into the batter.
Place a frying pan on medium heat or a griddle on medium heat. Put a tbsp of butter onto the hot surface and wait until it melts and spread it around to cover the surface where the pancakes will be cooking. Pour about 1/3 cup of batter to make one pancake, into the hot pan. If you want to do multiple kinds of add-ins, you can sprinkle them onto the pancake that is waiting to be flipped. Flip the pancake once it’s bubbling on top and cook until golden brown. Place on a plate and repeat the steps until the batter is gone. You should get 8 medium-sized pancakes out of the batter.

How do I store these pancakes?
I recommend eating these hot and fresh but if you do have leftovers, you can put them in a Ziploc bag for up to two days. Reheat in the microwave covered in a wet/damp paper towel for 1 minute.
Can this recipe be gluten-free/vegan or can any of the ingredients be substituted for other dietary restrictions?
Unfortunately, it is not my specialty. However, there are many bloggers who specialize in gluten-free, vegan, nut-free, dairy-free, etc. desserts and I recommend giving them a try!
