Whether you have leftover mashed potatoes that need an upgrade or a game day appetizer, these Loaded Mashed Potato Bites are the answer. always. Crunchy on the outside and cheesy mashed potatoes on the inside… I know, say less, right?
THE LOADED MASHED POTATO BITES EXPLAINED:
Mashed potatoes, cheddar cheese, bacon, parmesan cheese, and chives scooped into bite-sized balls and frozen. Then dredged into flour, egg wash, and panko bread crumbs and fried until golden brown and crispy.
HOW TO MAKE THESE POTATO BITES:
Open the package of mashed potatoes and stir in cheddar cheese, bacon, pepper, cayenne pepper, garlic powder, onion powder, and grated parmesan.
Using a cookie scoop, scoop the mashed potato mixture into a 13×9 baking dish with a lid. Place in the freezer for at least 3 hours.
Once frozen, set up three separate bowls, you want to have flour, the egg and milk combined, and both breadcrumbs. Start out by dipping both sides of each ball of mashed potatoes in each bowl in the flour, egg, and breadcrumb order. Place on a plate to get them ready to fry.
Fill a large pot or dutch oven with peanut oil until it reaches 2 inches high. Place on a burner at medium heat. Let the oil get to about 350 F and place 3-4 balls in at once, let sit until golden brown and then flip and let sit for about a minute. Remove from the oil and place on a plate with a paper towel to capture excess grease. Repeat this step until all the balls are done!
Enjoy after letting them sit for about 5 minutes. Serve with marinara sauce or ranch!
