What is up with the s’mores trend within the past year? I’m definitely not complaining, but pretty much every dessert out there has been ‘s’morified.’ These Peanut Butter S’mores Bars are the only dessert you’re going to need this summer. They’re not messy, they travel well, they’re super easy to make, and they’re absolutely AMAZING!
THE PEANUT BUTTER S’MORES BARS EXPLAINED:
A fudgy brownie bottom layer stuffed with peanut butter cups, topped with pieces of graham cracker cookie and toasted marshmallows.
FAQ’S:
I don’t like/can’t have Reese’s, can I skip the peanut butter cups?
First, I’m so sorry for you, but yes you can skip the peanut butter cups! If you want, you can put in a tablespoon dollop of peanut butter in place of them. OR you can skip the peanut butter stuff all together, either way works!
I only have mini marshmallows, can I use them in place of the regular size?
Yes! In place of 1 regular size marshmallow, you can use about 4-5 mini marshmallows.

HOW TO MAKE THESE PEANUT BUTTER S’MORES BARS:
Melt butter and pour into a stand mixer bowl, along with olive oil and both sugars. Beat on medium with whisk attachment for about 1-2 minutes. Stir in eggs and vanilla extract. Add in flour, cocoa powder, and salt. Mix on low just until combined.
Pour batter into prepared baking dish and spread to smooth the top evenly. Place peanut butter cups in the center of what would be each bar, so 3 lines of 3 peanut butter cups.
In a medium bowl beat butter and both sugars together until fluffy. Over a bowl (that has a lid to keep half the egg to not waste it) break an egg but dump half the egg white into the bowl and break the yolk and dump approximately half into the bowl and keep for the next morning to make eggs. Pour the rest of the egg/egg white into the butter sugar mixture, along with vanilla extract. Mix until combined. Add in flour, baking powder, and salt.
Fold in crushed graham cracker pieces. Take a piece and flatten it out with your hand and place it on top of the peanut butter cups, repeat until mostly covered.
Bake for 15 minutes, take out and place one regular sized marshmallow in the middle of each bar, like the peanut butter cups were placed. Put back in the oven and bake for 5ish more minutes and broil until marshmallows are toasted. OR if you have a kitchen torch, you can toast them with that instead of broiling. Let cool for at least 5-10 minutes before cutting.
