Fluffy Pancakes

Buttery, fluffy pancakes

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 1 1/2 cups buttermilk 1 cup + 6 tbsp milk and 2 tbsp white vinegar in a separate bowl until bubbly
  • 2 eggs
  • 2 tbsp melted butter or oil (vegetable or canola)

Instructions

  • In a medium mixing bowl mix together the flour, baking powder, baking soda, salt, and brown sugar.
  • Add buttermilk, eggs, and melted butter (or oil) and stir until combined. There may be lumps, that's okay!
  • Place a frying pan on medium heat or a griddle on medium heat. Put a tbsp of butter onto the hot surface and wait until it melts and spread it around to cover the surface where the pancakes will be cooking. Pour about 1/3 cup of batter to make one pancake, into the hot pan. Flip the pancake once it's bubbling on top and cook until golden brown. Place on a plate and repeat the steps until the batter is gone. You should get 8 medium-sized pancakes out of the batter.
