Cookies, brownies, blondies, or bars of any kind are my favorite things to make because you can whip them up quickly and eat them in less than an hour, typically. These Strawberry Vanilla Bean Blondies are the yummiest, easiest, summertime baked good you can make!
THE STRAWBERRY VANILLA BEAN BLONDIES EXPLAINED:
Buttery, vanilla bean blondies filled with tangy strawberries and topped with powdered sugar and a vanilla bean glaze.
HOW TO MAKE THESE BLONDIES:
prepare the pan:
Preheat the oven to 340 F and line an 8×8 square pan with parchment paper.
make the blondie batter:
In a microwave-safe mixing bowl, melt the butter and mix in both sugars until combined. The sugar will not be dissolved.
Mix in the egg, egg yolk, and vanilla bean paste until smooth. Set aside.
Smash freeze-dried strawberries until mostly fine powder but there should still be a few small pieces and coarse crumbs. Pour into the bowl with the rest of the ingredients, along with adding the flour and salt. Gently stir with a rubber spatula until all combined.
bake the blondies:
Pour batter into the prepared pan and smooth it out evenly. Bake at 340 F for 24-28 minutes or until golden brown with a crinkle top and not jiggly. Let cool for at least 15 minutes and then cut into 9 or 12 squares.
optional– Sift a light layer of powdered sugar and/or make the vanilla bean glaze by mixing the ½ cup of powdered sugar with 1 tablespoon of milk and 1 teaspoon of vanilla bean paste in a small bowl and drizzle over top.

Can this recipe be gluten-free/vegan or can any of the ingredients be substituted for other dietary restrictions?
