I don’t know about you, but I strongly believe that peanut butter belongs in (almost) everything. A friend of mine asked me to create a recipe that was full of peanut butter, she was my flavor tester and LOVED these Peanut Butter Blondies.
THE PEANUT BUTTER BLONDIES EXPLAINED:
Peanut-buttery, soft, chewy blondies topped with a silky peanut butter frosting.
HOW TO MAKE THESE PEANUT BUTTER BLONDIES:
In a medium mixing bowl, whisk together flour, granulated sugar, brown sugar, salt, and baking soda.
In a medium microwave-safe bowl, melt peanut butter and butter and stir together until combined.
Pour melted peanut butter/butter mixture into the medium mixing bowl with the flour. Fold with a rubber spatula until combined.
In a small bowl mix together egg, milk, and vanilla extract. Mix into the medium mixing bowl containing the other ingredients. Stir until combined.
Press mixture into the baking pan and bake for 15-20 minutes until golden and not jiggly.
In a medium microwave-safe bowl, melt peanut butter until partially liquified. Using a hand mixer, mix in powdered sugar, milk, and salt. Spread evenly onto bars and place into the refrigerator for at least 20 minutes.

FAQS:
How do I store these peanut butter blondies?
The frosting is made out of butter mostly so if they’re kept at a temperature higher than 72 F, they will begin to become melty. I recommend keeping them in the refrigerator in an airtight container or ziploc bag. Or keep them in a cabinet if your home is consistently at 71 F or lower.
Can this recipe be double/triple or halved? (how to/what not to do/why)
I have not tried doubling or tripling this recipe, but if you do decide to do so, I would recommend making this recipe in two or three batches. Halving the recipe would work, but the size of the pan would need to be reduced to an 8×8 or 9×9 pan versus a 9×13.
Can this recipe be gluten-free/vegan or can any of the ingredients be substituted for other dietary restrictions?
Unfortunately, it is not my specialty. However, there are many bloggers who specialize in gluten-free, vegan, nut-free, dairy-free, etc. desserts and I recommend giving them a try!

- 1 cup flour
- 1/2 cup sugar
- ½ cup brown sugar

- ½ cup butter
- ½ tsp baking soda
- ½ tsp salt

- 1/4 cup butter
- 1/4 cup peanut butter
- 3 tbsp milk 2% or whole
- 1/2 tsp salt
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350 F and line a 13x9 baking pan with parchment paper.
- In a medium mixing bowl, whisk together flour, granulated sugar, brown sugar, salt, and baking soda.
- In a medium microwave safe bowl, melt peanut butter and butter.
- Pour melted peanut butter/butter mixture into the medium mixing bowl with the flour. Fold with a rubber spatula until combined.
